Does the selection of tanks limit the options for historical accuracy? Certainly, but that doesn't mean there aren't options, and despite your strawman, nobody's asking for something that isn't in the game. In this case, with it being Africa, there were a number of possible choices. The Lee was a decent choice for the allies, but the Stuart (both M3 and M5), Churchill, Sherman, and Matilda all saw action in Africa as well. On the German side you mention the obvious Pz IV and Tiger, but the Pz IIs and IIIs and the Panzerjaeger I all saw actual use in Africa.
Perfect, no, but a lot closer than tanks that never touched the desert sand, and I don't recall seeing bonus weekends for most of the tanks mentioned. There might also be other ways to reward people - mounting the historically-accurate weapons would make for an interesting twist to reward, although I expect you'd just be gimping yourself by trying to do so, as not enough people would.
As for chilling out, you seem far more on the edge of popping a vessel than I do. I'm disappointed in the direction things are going, I managed to express that without resorting to name-calling. Try it some time.
