Welcome to the (in my humble, biased, opinion) best version of World of Tanks!
The arty changes will take some getting used-to, but the main takeaway for you to be aware of is that they are much less likely to penetrate and nuke you, but much more likely to hit you for ~1/8th - 1/4 of your health bar. You can mitigate the stun mechanic with the re-usable consumables that were added in the same patch. (A huuuuuuge quality-of-life improvement, imo.) Knowing when to use the medkit and when to wait out the stun timer is something that will come to you over time.
The Pudel is a difficult tank to play. So is the T-44, I think. Both are squishy support vehicles (the t-44 has more armor by comparison, Pudel is totally a sniper tank with its ridiculous aim time and squishy turret) that rely on good positioning to make a difference in-game. The KV-1 with the derp gun is a fun one, it doesn't have the armor to reliably bounce hull shots (especially up-tier) but the turret is quite solid. Go hull-down when you can, and don't be afraid to lob a few HEAT rounds, since they really hurt if they penetrate (but have low penetration values, obviously).
As for the Italians! I recommend you try to grind out that line until at least tier 8. That's when they really get interesting, because they get the autoreloader mechanic. If you don't want to wait, you can always pick up the Progetto when it goes on sale again. That's one of my favorite tier VIII mediums and it's almost identical to the tier VIII Pantera, The low tiers are kinda hit-or-miss, I like the p.26 and the p.43 because they have pretty high penetration on their HE rounds which lets you occasionally land some really beefy hits. I'm currently on the Tier IX Standard B and I'm digging it quite a bit. Looking forward to the tier X!
